Yes, it will resolidify but separate out to milk solids and fat in
layers and be much softer. It might also be that they cook it enough to
brown it slightluy and give it a bit nuttier taste, but since you say
they said melt, that is probably not the case. I think it might be a way
to strip out excess water as well. Do you think they might have leftout
the instruction to skim off the milk solids and leave clarified butter?
Aren't caraway confits the seeds cased in melted sugar?
