There is also the fact that spice grinders wandered from manor to manor and
that the quantities listed may well be a standard formula of quantity used
for grinding assuring that enough was done to last a while before the tedious
process had to be done again.
OTOH, they could simply be inaccurate quantities. al-Baghdadi and most other
period middle eastern and Andelusian recipes list quantities and they are not
inaccurate nor are they excessively large amounts for the recipe when a
standard size of approximately 1 1/2 LB of meat is used as the basic
ingredient.
