Actually, many sausages (particularly if they are well aged) begin to develop
a perfectly harmless mold on the skin. These molds are usually white, but I
have seen reds and blue-greens as well. If in doubt, throw it out. But, you
may want to sample a bit of the sausage without the mold first.
