In her recipe for barley bread ("Gerstenbrot" in the German translation,
I looked at) Maggie Black writes something to the effect, that the
recipe was deduced from descriptions of bread backing extant in several
English manuscripts ("Das Rezept unten ist aus alten Beschreibungen des
Brotbackens abgeleitet, die sich in verschiedenen englischen
Handschriften finden"; p. 55).

Sure, descriptions can be helpful to reconstruct a procedure and a
recipe.

But where are these descriptions and manuscripts?
