Burgundy is essentially a generic term for red wine. It is not sweet in any
way and sauterne or sherry, would be very inappropriate as a substitution
IMO, since they are both white and sweet.
There are many French wines available from the Burgundy area of France.
Simply ask the clerk at any liquor store for a 'Burgundy'. Burgundy is also a
generic jug wine name for some red wines from California which,
unfortunately, are probably closer in flavor to period Burgundies than the
modern wines from Burgundy.
White and sweet are definitely not good substitutes, IMO.
