The medieval castles were stone, when the owners could afford to build in
stone.  Guys, these are cold!  You want layers of warm clothing for the
events held in them in Drachenwald.  And the cellars are even
colder--usually no light, maybe just a few air holes at ground level. 

 I've been told that deep stone cellars stay at a constant temperature of
40* [degrees F].  That's what your refrigerator is.  If you threw some
straw into a small chamber, added ice blocks in winter, you could stack
them in such a way as to leave a sort of 'cave' into which you could put
food.  It was done in the USA later, don't know for sure about medieval
castles.
