Danica,

Are you using genuine saffron, or Mexican safflower?  Which recipes did
you cook, from which period source, and did you redact them yourself? 
How did you use the saffron?  With enough clues, we might be able to help
you deal with the saffron, or OTOH, like Cariadoc, you just might not
like it!  But let's explore possibilities, first.
