Let's just say that your appraisal of the show is much kinder than mine. He 
also doesn't answer e-mail and there seems to be no direct contact with the 
ignorant people who produced the show. So long as they continue to use 
professional chefs  instead of those of us trained in medieval cuisine to 
produce these shows they will continue to spread nonsensical and fictional 
information concerning period cookery. :-(
