Actually, that's called a "degreasing pitcher" here in the states, and it's 
not used for making clarified stock.  The Marmite was designed for this, and 
has an actual spigot at the very bottom (usually with a screen in front of 
it) so you can draw off the clarified liquid without disturbing the "raft" on 
top.
