Tasty bits - well, many favor the liver, but that is usually
the hunter's "prize" at least in Native American thinking.

I can't speak to the taxidermy question, but as for usable
parts, any of the bones can be used.  Rib bones can be used
to make a breastplate.  Teeth can be made into a necklace.
(well, the front ones generally).  Any bit that looks like
it may be easily fashioned into a button makes a good one.

Just honor the creature whatever you do.
