My experience with the Good Sausage recipe in le Menagier is that they come out remarkably similar to, but not the same as, sweet Italian sausage.  Fennel and a little pepper, IIRC, and salt . . . some fine spice of ginger, etc.  They would be an adequate substitute as long as the italian links are not the hottish kind and are just the fennel flavored jewels.
