I am relatively new to the world of SCA cooking, but I can see how requiring
a certificate would scare off volunteers.  However, I can see it's
usefulness.  I have grown up helping my mother cook and my husband went to
cooking school, but I am always looking for new ideas on how to do something
or a better way of doing things.  My opinion would be for the head cook and
assistant to have the certificate and the other volunteers to not be
required to have the certificate, but make it preferable to have the
certificate.  If anything you will be assured that the person(s) have washed
their hands before handling the food.  There are a lot of women I have seen
that do not wash their hands after the bathroom.
