Ho hum...

I believe it means "west of the Atlantic, but East of
the Pacific", which, in turn, translates to "American
Palate".  This is not an entirely unfair monicker,
either, since, for the most part, Americans have long
been reluctant to try new things, and seem to have an
aversion to anything which does not taste like chicken
or beef.  This does not apply to everyone, obviously,
and the American culinary spirit is becoming a bit
more adventurous.  But, if you have ever been a cook
in a "typical" American restaurant, then you have to
admit that the monicker is fitting, if not a bit
unfortunate and frustrating.

I am glad to see the changes being made, and hope they
continue.  There is a world of flavor and texture out
there which Americans (in general) are only now
beginning to wake up to.
