This part of your question I can answer.  Hungarian paprika has a much 
stronger and distinct flavor than paprika grown in other areas.  It also 
comes in seven "flavors" ranging from sweet to hot.  I can't quite bring 
myself to use anything but Hungarian paprika thses days. . .
