SC - My upcoming feast

Our small canton has decided that it wants a camping and
fighting event, and here in Texas, that usually means Not In The
Summer!  So we are having "Border Wars" the first weekend of
February, and I have been asked to cook.

The site is primitive, but conveniently 10 minutes from my
house, and in the middle of our huge DFW metroplex.  It is at a
local resevoir/lake, and the area around has been preserved by
the Army Corp of Engineers.  We have no running water, no
electricity, and no permanent structures short of a brick privy,
and about 10 cement picnic tables.

Not only do they want some sort of feast, they want a dayboard. 
But as I will be entertaining fighters, I plan to keep it
simple, not too elegant, and warming, as even in Texas chances
are that it can be damp and drizzly.

So far, I had thought of breads and cold meats and cheeses,
served with a thick stew and maybe some simple broth for the
dayboard, providing hot water for beverages of choice.

And then for the feast, I think I will have a variety of roasted
meats (pork, beef, maybe turkey), sauces, perhaps one simple
side dish, soup, and hot cider.  They also wanted a limited
pol-luck, so I am going to suggest some things, and ask for side
dishes or desserts.  The meats will all be precooked, and I plan
to use barbecue grills with lids for warming ovens.  And then
for those bardically inclined, I will continue to have the hot
cider and hot water, and whatever is left of the soup for the
rest of the evening.

For food service, I plan to use the Baronial pavillion, which is
fairly large, and have the populace come get food, and take it
back to their campsites to eat, as there is not a good way for
me to provide an eating place large enough and lit for everyone.

Our Knight Marshall, who is the autocrat, is really excited
about the deep-fried turkeys because I could cook them on site,
in a matter of minutes instead of hours, and could keep doing so
until I collapse and run out of turkeys.

So what I am looking for is suggestions.  I want to do a
documentable feast, but with this group, I will be lucky to keep
the baked beans out of it. (sigh)

What do you think?  Am I completely crazy?  I got this job
because I protested some of the food choices they were talking
about (the above mentioned beans, along with corn and potatoes).
