That sound like what my daughter does with tortillas.  She layers stuff on 
them and stacks on another tortillia and adds cheeses and another..and so on 
sometimes two, three or four layers, then she cooks it in a cast skillet 
covered for a few minutes.  They're great!

I may have to try the pie crust thing.  Usually when I make perogies I make 
an egg noodle dough.  A friend makes a non egg dough which is probably more 
like a pie dough.  hmmm...
