For reasons I don't recall, perhaps my newfound hobby of cooking for large 
crowds,  I suddenly became aware of handwashing a few years ago.  At work, I 
had more than ample opportunity to observe the habits of the 80 or so women 
sharing the 3 stall bathroom on our floor while waiting in line.  It was 
scary.  About half were college educated, all had at least a high school 
degree, three-quarters were mom's.  So there is every indication that they 
all understand the why's and wherefore's of handwashing.  But you don't want 
to know how many did not wash their hands before leaving the restroom, or 
merely wet their fingertips under the tap, even when on their way to lunch.

Very scary.  In reaction, I seem to have developed a near compulsion on 
hand-washing.

On the other hand, more than I expected brushed their teeth after so much as 
a cup of coffee and quite a crowd brushed after lunch.
