There's no one ultimate list, but the best collection of good SCA 
lists i know of is on the Ansteorra site at:
http://lists.ansteorra.org
You can subscribe to any of them from that page.

Also, take a look at the List FAQ, because there are more lists 
there, including some NON SCA, academic lists on topics of interest 
to some SCAdians.

This tempting site is partially why i am subscribed to THIRTY-THREE 
SCA lists that i don't really have time to read...

Additionally, a search using "SCA" and "Society for Creative 
Anachronism" over at eGroups
http://www.egroups.com
will turn up MASSIVE numbers of SCA lists, no guarantee about quality, though.
