I have a friend from the UK living here in Stillwater, OK. She served me
Toad in the Hole. She fried beef sausage links (her husband keeps kosher)
and made a batter similar to pancake batter. She blotted the sausages on
paper toweling, placed them in a cake pan and poured the batter over. It
was then baked until brown on top.
I was told the bread slice with egg in the center was called "Eggs on
Horseback." Don't ask me why. Leanna
