SC - Chicken in Orange Sauce

Actually, I make meatloaf with whatever I have on hand, so the recipe
varies, but the base recipe is this:

2 lbs of meat
2 eggs
1 sm chopped onion
1 sm. mild hot pepper, minced
Any leftover veggies available, in too small a dose to really serve (corn,
green beans, greens, whatever)
Salt
Pepper
Garlic powder
Dash of cinnamon
Sage
Tomato sauce

Mix all well except tomato sauce, form into loaf (or loaves), top with
tomato sauce and bake at 350 until done.

I frequently add various spices to the tomato sauce, depending on my mood-
chili powder or curry powder are both good. Also, being single, I frequently
make up a batch and put it into the mini aluminum loaf pans and wrap it with
plastic wrap or foil and freeze it before cooking, then cook it when I'm
hungry and lazy.

For venison meatloaf, I add mayo instead of the eggs, since it seems to add
fat (which venison lacks) and cuts the "game" flavor that people seem to
object to. Also, if I have any, I'll grind juniper berries, 3 or 4, and add
them.
