SC - Adaptation from Apicius for jerking meat

The Hais recipe from His Grace's Miscellany is easy, and a great crowd 
pleaser.  I made these for the Barony of Atenveldt Masqued Ball last friday, 
and a double recipe disappeared rapidly.  The recipe calls for them to be 
rolled in sugar, and I've tried several types of sugar.  I think my favorite 
for taste is brown sugar, but the powdered sugar seems to go over better with 
diners.
