I use wine in cabbage soup...

I like to make my own beef/veal stock, and toss in the freezer for when
I need some.

When i am doing the cabbage soup, I thaw out the stock I need, boost it
with some nice smoked pork neckbones, then add a cup or so of wine and I
like to use mild italian sausage, cabbage, celery, carrots, garlic adn
onions - treating the itaian sausage as the seasoning profile as well. I
find that the caroway and other spices normally found in sweet italian
sausage go quite well with cabbage.
