Saumon gentil (from one of the "Curye on Inglyish" manuscripts), but
skip the four or use some non-gluten substitute.

Just oven roast some salmon ("sides", on a bed of coarse salt).

Make a lenten version of Ryse of flesh from Forme of Curye. 

Make Applesnow (victorian era egg-whites and apple sauce dessert) or one
of the period spiced apple based desserts.

Just a few that popped into my mind.
