Well, I don't have a reference for this in period, but it is exactly the
process I went through to graduate from the ACF's apprenticeship program.
 I don't remember if we knew what the food stuffs would be in advance (I
don't think so - I do remember having to bone a chicken in front of one
of the Chefs, and bluffing my way through it because I had lots of
practice in boning ducks, but had never had occaision to do a whole
chicken before the day of my test - hard to believe after 2 decades of
cooking with my dad and 3 years of apprenticeship, but after all, one
fowl looks much like another once you're inside of it ;).  We also cooked
the meal with all 4 of us that were graduating all at once, so it was a
team effort with our individual contributions watched and graded by the
master chefs on the judging team.
