My dear Lady Constance (are you used to the "Lady" yet? *grin*),
I am so pleased to be able to share with you a recipe! This is taken from
Cariadoc's Miscellany. It is very good and really does seem to keep forever
with no ill effects.
Syrup of Lemons
(A 13th century, still and non-alcoholic lemonade)
Ingredients:
Equal volume of lemon juice and sugar (i.e. cup for cup)
Method:
Combine lemon juice and sugar.Cook together for about ½ an hour. Cool and
decant into sterilised bottles. The syrup will keep for at least a year
without refrigeration.
To Serve:
Dilute with about 4 parts hot water or 8 parts iced water.
Gwynydd (who makes a nice sum of money selling syrups at events - they are
so easy to make that I never fail to be amazed that people pay me for them,
but who am I to complain?)
