In part, I do agree with this view. However, I will qualify my previous 
remarks with the rejoinder that the cook should choose a dish that they 
perceive the populace will like and be familiar enough with it so that when 
it is ready to the cooks liking, it should be served. Please understand that 
I was also responding to what I considered an unbridled attack presented by 
the individual in the worst possible way on the most widely read discussion 
group for food in the SCA.
