SC - Red & Spanish Mustards-Help?

Greetings
I have gathered up my courage to enter my first A&S, held in my
Barony next weekend, and have chosen Mustards as my victims. I re-did
the recipe for Niccolo's Red Mustard - for a half portion - using a
little more bread, and purple grape juice (I could get that in a small
bottle, the white only came in half-gallons <s>). It seems to be a hit.
I have to make more - even one day old, my DH has taken quite a bit for
his sandwiches.
I also made up the Spanish Mustard # 1, using broth and breadcrumb,
that I found in the Florilegium. Lady Brighid was the translator for
this, and I would ask her if I might please have a copy of the original
Spanish text of this, to include with my poor excuse for documentation
- - with proper credits, of course!
Also, if any of you kind and knowledgeable gentles have any
suggestions on presentation for these victims of my kitchen I would be
most grateful.
