I make what I"m told is a pretty good meatloaf, as follows:

1/2 # lean ground beef
1/2 # ground pork
1/2 # ground veal
1/4 cup oatmeal
1 egg
1/2 cup finely chopped onion
1 1/2 tsp. salt
1/8 tsp. pepper
catsup
parsley (chopped, if fresh)

mix all of the above ingredients except the catsup and parsley thoroughly (I do
it by hand rather than using a spoon or other implement). Spray a baking dish
with Pam and put mixture in the dish, making sure entire dish is full (Or you
could make a loaf, if you want). Spread the catsup on top of the mixture, and
sprinkle parsley on top of that. Bake at 350 for about an hour or until the
loaf pulls away from the sides of the pan and cutting into the center shows
done.

I think I got this from my mother, but have modified it over the years. She
only used beef, and that was good, but we found that this mixture is better
tasting.
