SC - OP recipe request

Here's the one my Mother's always made.
3 lbs. ground beef
2 eggs
1 1/4 cups cracker crumbs
1/2 cup sweet pickles, finely chopped (not relish)
1/2 cup ketchup
1 medium onion, chopped
1 large green bell pepper, chopped (or 2 medium)
Salt & pepper to taste

Preheat oven to 350 degree.  Put ground beef, eggs, pickles, onion, and bell 
pepper together into a bowl.  Mix with your hand and then add the cracker 
crumbs and season.  Add ketchup and mix again with your hand. Form into a 
rounded loaf in a 13x9-inch pan, and flatten down slightly.  Place in the 
oven and cook until done.  Cut open after about 45 minutes to an hour to 
check doneness.  If it's done, spread ketchup over the top and replace in 
the over 15 minutes.

*You may have to occassionally pour off the grease.

Note: If you add too much cracker crumb and it's still too dry after adding 
the ketchup, add another egg.  You can substitute breadcrumbs for cracker 
crumbs.
