Greetings!  I'm way behind on reading digests but saw the topic
and the query about Sophie Coe's book, which happens to be
_America's First Cuisines_, 1994, University of Texas Press, Austin.
It is a scholarly work, first presented via Petits Propos Culinaires
in a series of articles and later made into this book.  It includes
Aztecs, their food ingredients, cooks and menus; the Maya, their
flesh food and produce as well as breadstuffs; and the Inca, their
animal, vegetable and mineral foods.  There are chapters on New World
staples and produce.  If one is working with any of these cuisines,
this should be a book to read and compare with others.
