I figured it was like the bread crumbs in meatloaf.  Maybe it's 
meant to absorb some of the bacon fat.

Anybody remember the old Star Trek episode, "The Menagerie"?  
The beautiful heroine turned out to be seriously scarred and 
disfigured.  The kindly aliens had restored her to perfect health after 
her ship crashed, but they didn't know what a human was 
supposed to look like.  Sometimes medieval cooking feels like 
that.  We've got all the ingredients for Tredura, but we don't know 
what it's supposed to look like.
