Ooops- just realized you're in Oz, so likely no catfish.

However....

There are any number of fish and shellfish other than cod and tuna. They all
cook rather quickly, if they aren't in huge slabs.

Second suggestion-

Shrimp w/fresh or frozen peas, or, better yet, sugar peas, in a hollandaise
type sauce, over rice. Ginger and a bit of pepper as the preferred major
spices.

Fresh fruit, nuts, and cheese still stands.....

Is chicken meat or fish for these folks?
