Um ... Selene dearest ... I don't mean to contradict
you, but with one exception, all banquets that I have
done ALL had the announced dishes sent to the table as
they had been listed.  The only exception was the
banquet for the BOD meeting you helped me with.  But
that was only because we received no reservations in
advance and I scrapped the menu at the last minute and
put out a severely revised banquet based on how many
people showed up that day.

Now that I am thinking about it, for the Angels 20th
Anniversary banquet, I almost did scrap the rosettes,
but you yourself came to my rescue and did them for me
over your coleman camp stove.  So you have played a
major part in helping me be able to say all this.
