SC - Bad Feasts--Philosophically Speaking

The most important up front thing the autocrat or group can do if the event 
will be at a new site is to make sure that the kitchen is adequate.  Never 
assume that all those lovely appliances work.  If a kitchen has known 
problems make sure the new cook is aware of them.
