I have read some of the responses to the original post and agree with them.
I have only to add small points.
Be sure everyone in the kitchen gets several "humor" breaks. Finding those
interesting gummy worms in the salad greens or eyeballs in the onion bag can
really add a lot to the tension that can build if all is taken as a heart
wound.
Get volunteers _in advance_ for clean up duty. Often a passer-by during the
day is very happy to stand and wash prep stuff so make (using the plastic
bag method previously seen on the list) a plastic covering apron so the
volunteer doesn't have to spend the day wet. Clean up is very important, as
we all know, and can be a drag if you cook all day and then find you musts
wash all night. Also, be sure to include the costs of suds, bleach and
perhaps dollar store towels in your cost analysis.
Good luck, and remeber to have fun. Mostly they won't kill you if you make
a mistake.
