My thinking is probably a little off, but dosen't the natural grease and oil
from the meat balance the acidity of the tomatoes in the same way olive oil
balances vinegar in salad dressing?  Could it be your choice of meat was
better for overall health and cost, and moms was better for flavor?  I know
tomatoes vary a lot and I look forward to seeing what the regular
contributors come up with to solve this age old question of balance.
