My brother does the big barbeque contests like Memphis in May, there are 
more categories than you can imagine.  I know his ribs take about 6-10 hrs 
and the shoulders a lot longer.  Also I just talked him out of 2 quarts of 
his dry seasoning mix, a recipe he won't even share with me.  They compete 
on type of meat and type of sauce.  Then are graded on appearance food and 
cooking booth as well as presentation.
