This may be difficult to quantify. It will vary by class. However, while
today organ meats don't often seem to be desirable, in period the reverse
may be true. There are often less amounts of organ meats by wieght than
muscle meats in an animal and they can supply a lot of necessary
vitamins in an age before year round green vegetables and mineral
suppliments.
