MK's Coronation last weekend had a simple dayboard.
Bagels, cheese, grapes, hot drink setup. Just a largess
thing, on a happy occasion, so that those who were there
early, or weren't able to go offsite for lunch (many did)
wouldn't go hungry. Most of the time there's a separate
lunch offered $2-3 (often farmed out to other people than
the head cook), or a bottomless mug for iced tea/lemonade in
hotter weather (this wasn't) for $1.
Feast is almost always a separate fee, and -whew- it just
wouldn't occur to 90 people to crash feast - maybe because
we set up the seating pretty carefully connected to the
tickets sold - 150 this time (19 tables at 8 feasters each;
which lets the cook know exactly how many bowls/plates of
food to serve out - and for calculating cost control. This
included high table, and the servers). We also usually have
different site tokens for paid feast from the site only
tags, and people are expected to wear them showing for the
day (this requires no surprises from the Event steward with
a bunch of feasters you didn't buy food for). At Coronation,
we issued feast raffle tickets, which were collected at the
beginning of feast, then a prize was presented. Tricky
double duty, eh? If even a few feast crashers bumped real
paid feasters, it would be obvious immediately, both by lack
of ticket and lack of seating. So, around here, while not
unheard of, feast-o-crashing is pretty rare.
Why all the carefullness? Around here, the Cook's
reputation is based on both the fare and the economics. How
about that? Francesca (our Coronation head cook) gets high
marks on both scores. HRM wants game, he gets game. Venison
on the one hand, and a roast suckling subtlety bread
pudding. A great time, good food.
