SC - fresh eggs?

The only reason I would let eggs rest for a week is because, if boiled,
very fresh eggs are nearly impossible to peel.  Otherwise, I used to gather
eggs, then go make a fresh omelet for dinner.  Heaven!  There's no
comparison between fresh, free-range chicken eggs and the pale imitation
eggs laid by chickens imprisoned in cages and sold by the local foodstore.
