<<SNIP>> One of
the things I'd hoped to do when I got my food processor this last spring
was some sausage. However, I didn't find any food processors that
did this, only mixers. I figure I'll have to dig out the metal
hand-cranked meat grinder and see if it will grind and stuff.>>>
I enjoy grinding mine with a cast metal grinder I have. It is a sort of meditative activity. It is awkward to stuff the casings with it, though, as it has a short hopper and no ram-rod to force the meat down. I am currently surfing for one of those large cast-iron sausage stuffers that looks like a small wine press. It isn't a neccessity (you can stuff casings with a funnel and a dowel), but makes for easier stuffing of 50# at a clip. I won't buy a dedicated electronic sausage grinder/stuffer, but have no problem with the hand crank technology of the 1800's.
