Acidity in tomato sauce?  Actually, I put a teaspoon of baking
soda in my sauce, and the hydrogen comes out of the citric acid,
leaving the sauce a little less bright red, but a little more
sweet.  Of course, you have to be aware that when the acid is
neutralized, it bumps up the sodium count somewhat.  Not much,
and I like a less acid sauce.
