I have had experience with all 3 brands of these food processors. I 
unmercifully abused my father's Bosch food processor back in the late 
70's-early 80's. No matter what I did to it, or put through it, it did NOT 
BREAK or even overheat. If I could afford one, I'd buy it in a heartbeat.

I own a KitchenAid, and I'm unsure of the size, but it is one of the 
smaller ones. I am somewhat unimpressed by it. I've overheated it several 
times simply kneading bread dough. The attachment for slicing/shredding and 
grating is great though.  I am sure that a sausage attachment would be a 
lead pipe cinch to work with.
The added advantage to Kitchen Aid is that you can buy replacement parts 
and additional accesories in almost ANY variety type store or web site.

Now, the Oster Kitchen Center. It was a DREAM. I completely loved the THREE 
that I owned. HOWEVER, I used them quite heavily, for regular family 
cooking (7 people), and for feasts ( for 100-150 on a fairly regular 
basis).  We once sliced 50 lbs of carrots inside 20 minutes, it was such a 
blast for 3 cooks with carpal tunnel. All 3 of my kitchen centers had their 
motors simply wear out. At one point I had the shredding safety catch fall 
apart, but it was easily superglued back together.  If they would just put 
a serious size motor into it, it would be simply divine.  I can't recommend 
the Oster for anybody who does cooking on a serious and/or heavy duty 
basis, because it just won't last.

Good luck on your choices. And as for sausage casings, check with the 
ethnic groceries in your area. Many of them make their own sausages right 
there,and regularly stock sausage casings.
