Someone was asking who started the apple butter question and it was me.  Out
of a modern cookbook, I copied a recipe for Spicy Apple Butter.  There is
not any sugar listed.  It is just a mix of apples, i.e. Jonagolds, Spies,
Gravensteins, Golden Russetts, Mutsus and Criterions, lemon zest and juice,
cinnamon, cloves, allspice, ginger and salt.  That is it.  I do not know if
these spices would be period, but some type of cooked fruit butter possibly
would be used.  The cookbook is The Farmhouse Cookbook.
On a store bought jar they have apples, sugar, high fructose corn syrup,
apple cider concentrate and spice.
Hmm, now that apple season is upon us, I think I will go to the farmers
market and get some of the apples from the Amish and make my own.
