Here's a cole slaw recipe from the Lüchow's Cookbook of the 1950's.
Lüchow's was a well-known New York German restaurant for just over the
hundred years between the 1880's and the 1980's. Anyway, they were one
of the most famous German restaurants in the U.S.A. in their day, and
here's their cole slaw recipe. Whether it's German cole slaw I couldn't say.
 
"LÜCHOW'S COLE SLAW

1 head white cabbage
2 quarts boiling water
2 onions, shredded fine
1 or 2 green peppers, shredded fine
1/4 cup vinegar
2 egg yolks, beaten
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons olive oil
1 cup sour cream

Wash cabbage; slice or cut fine. Scald 5 minutes and drain well through
colander; press out all water. Mix with onions, green peppers, and
vinegar. Beat eggs, salt, and pepper together; add oil gradually,
beating steadily. Pour over cabbage mixture; stir well. Pour sour cream
over and stir until evenly mixed. Serves 4 to 6."
