While I worked in hotel kitchens, we never refrigerated 4 gallon buckets
of mayo.  Granted, we did not take very long to go through that much
mayo, but it was never stored anywhere but on the shelf.  The mayo itself
won't go bad for quite a while, but salads made with mayo tend to be
things like chicken, seafood, eggs, etc., and will tend to go bad faster.
 It isn't the mayo, but the other salad ingredients that make it a bad
idea to let those preparations sit out.
