I have a recipe from a Pa Dutch cookbook written in 1936 that calls for
young red beets to be boiled, skinned and then added to a pot with brown
sugar, vinegar, cold water, some cinnamon and cloves.  Let that sit, remove
the beets, then put in the hard boiled eggs.
If a full recipe is needed, let me know and I will post it.
