A ranch is a station and is primarily engaged in the raising of stock. A
lot of the US cattle industry words are derived from the Spanish stock
tradition in the US Southwest and West. Thus ranch is derived from
"rancho," or "farm."

At the moment, lamb is US$3.99/lb for leg, pork loin is running US$3/lb, and
beef is running US$2.60 for round steak in bulk. Better cuts start at
US$3/lb and go up. Chicken is the inexpensive meat at about US$.79/lb. And
this is in a stock raising state. Prices tend to be higher in other parts
of the US.

The market price at the stockyards does not reflect the price at the
grocers, so there is an opinion that the meat packers are using the problems
with disease abroad to inflate prices in the US.
