I have found that the pastuerized eggs in a box work nicely for all sorts of dishes, and they should be quite safe. You do need to check the ingrediants, though, if you are doing a sweet, as some of the eggsinabox have small amounts of onion powder added to them. When i make egg nogs or sweets I check to be sure I get one without such additives. - -Aleska
