Why _tart_ apples? I don't recall the quince I tasted as being
particularly tart--it reminded me more of an oddly-flavored cross
between a pear and an apple.  I've always wanted to be able to make
murri so I could play with some of the associated recipes, but I'd never
thought of apples.
